While the specific length of time Bubbies Sauerkraut ferments is most definitely a trade secret, we can tell you that it is fermented for less time than most of the other Sauerkraut on the market.

The shorter fermentation time for our Sauerkraut; and likewise, the longer fermentation time for our Pure Kosher Dills, Dill Relish and Pickled Green Tomatoes are processes that we have perfected over the years and definitely contribute to what makes these products so special.

		<description>WOW! Your Bubbies Bread and Butter Chips are the most amazing pickle slices I have EVER tried in my life! My friends, family and even co-workers (we usually have a Friday lunch in the office when time permits) love them! They are an excellent addition to a healthy hamburger. I usually make them with grass-fed beef, organic cheese, organic tomatoes, living lettuce (usually of the hydroponic variety) and top it off with Bubbies Bread and Butter Chips. Please keep up the good work, and thanks!</description>

The calcium chloride in Bubbies Pure Kosher Dills is a naturally occurring salt of the two ions calcium and chlorine.

Refined &quot;table salt&quot; is typically 95-99%  sodium chloride, a salt of the two ions sodium and chlorine.  The remaining composition of table salt is from of other salts: calcium chloride, magnesium chloride and potassium chloride to name a few, but can include other salts as well.

Sea salt contains not only calcium chloride, sodium chloride, magnesium chloride and potassium chloride but many other salts as parts of its broader elemental composition.  

When dissolved in a brine for pickling, a small addition of calcium chloride acts as a crisping agent helping to keep the crunchy texture of the pickles over the course of their shelf life.    

Calcium chloride is both lab produced and naturally occurring, Bubbies uses only naturally occurring calcium chloride in our Pure Kosher Dills, Dill Relish and Pickled Green Tomatoes.
