Potato Salad with Smoked Salmon

This is not your average potato salad! Use my horseradish to make a creamy dressing and serve with smoked salmon and greens.

Ingredients

  • 1.5 lbs new potatoes
  • Olive oil
  • Salt and pepper
  • 6-8 oz smoked salmon
  • Arugula or other greens to serve
  • Pickled red onion - garnish
  • Fresh dill - garnish

Dressing:

  • 1 tbsp fresh lemon juice
  • 2 tsp lemon zest
  • 2-3 tbsp Bubbies Prepared Horseradish
  • 1 tbsp red wine vinegar
  • 2 tbsp capers - drained
  • 2 tbsp fresh dill - chopped
  • ¼ cup creme fraiche
  • 3 tbsp olive oil

Directions

  1. Toss potatoes with olive oil, salt and pepper and roast in a 400 oven for 20-25 minutes.
  2. In a bowl combine lemon juice, zest, horseradish, vinegar, capers.
  3. Whisk in olive oil and Crème Fraîche.
  4. Add pinch of salt and freshly ground pepper.
  5. Taste and adjust seasoning if necessary.
  6. Remove potatoes from oven and let cool 5-8 minutes.
  7. Arrange smoked salmon on a platter, add a loose layer of greens over salmon.
  8. In a bowl toss potatoes with a good portion of the dressing.
  9. Arrange potatoes on greens and salmon.
  10. Drizzle with a bit more dressing and garnish with dill and pickled red onion.
