Homemade Dill Hummus

Homemade hummus is so easy to make and tastes much better than most store-bought brands.

Ingredients

  • 1 can of chickpeas/garbanzo beans, drained and rinsed
  • ¾ cup chopped Bubbies Kosher Dill Pickles & 2 TBSP of brine
  • 1 garlic clove, chopped
  • ¼ cup tahini
  • 1 tbsp fresh dill, minced
  • ½ tsp sea salt
  • 1 tbsp lemon juice
  • ¼ cup extra virgin olive oil
  • Optional: cilantro and pine nuts to garnish

Directions

  1. In a food processor, combine chickpeas, half of the chopped pickles, brine, garlic, tahini, dill, salt, and lemon juice.
  2. Scrape the sides down and add 1 tsp of warm water if the mixture is too thick to blend.
  3. With the food processor on low, slowly drizzle in olive oil.
  4. Transfer to a bowl and garnish with remaining chopped pickles, chopped cilantro, and roasted pine nuts.
  5. Serve with pita, veggie sticks or chips.
