Split Pea Soup

For a satisfying supper, you can't beat a recipe that has just one line of directions: put ingredients in a pot and ignore them for a couple of hours while the split peas do their magic and turn into a creamy, rich soup. I like Split Pea Soup so much that I've been known to eat it for breakfast. In the unlikely case that you run out of appetite before you run out of soup, it freezes beautifully.

Ingredients

  • Olive oil
  • 1 onion, chopped
  • 1 cup celery with leaves, chopped
  • 1 cup carrots, chopped
  • 1 clove garlic, chopped
  • Salt and pepper
  • 16-oz package split peas, rinsed
  • 1 ham bone or ham shank
  • 2 ½ qts chicken stock or water, or a combo of both
  • 1 bay leaf
  • 1 tbsp fresh thyme
  • Dash of cayenne, optional

Directions

  1. Place a large soup pot over medium heat and add olive oil, onion, celery, carrots, garlic, and salt and pepper; saute for 3-5 minutes.
  2. Add split peas, ham bone, stock, bay leaf, and thyme.
  3. Bring to a simmer for 1-2 hours, stirring periodically.
  4. Remove bone from ham and discard.
  5. The soup can then be left as is with the ham added, or you can puree the soup and then add the ham.
  6. Taste and adjust seasoning if necessary.
