Vegetarian Breakfast Sandwich

This delicious recipe by The Mindful Hapa is quick, easy to whip up, and bursting with flavor in each bite!

Ingredients

  • 2 GF english muffins, toasted
  • 2 vegetarian sausages, cooked according to package instructions
  • 2 eggs, cooked as desired
  • ⅓ cup Bubbies Sauerkrautt
  • ½ tomato, cut into slices
  • ½ avocado, cut into slices
  • Salt & pepper

Horseradish cream sauce:

Directions

  1. Start by preparing your horseradish cream sauce. Whisk together all ingredients in a small bowl until well combined. Set aside.
  2. Toast your english muffins, cook the veggie sausage according to package instructions, and prepare x2 eggs as desired (I love over easy!)
  3. Assemble your breakfast sandwich - to the bottom half of each english muffin, add tomato slices and veggie patty. Spread a layer of horseradish cream sauce on top of veggie patty and top with Bubbies sauerkraut.
  4. Next, top with avocado slices and cooked egg. Optional: finish with extra sauerkraut.
  5. Close sandwich with top half of english muffin, serve immediately and enjoy!
