Leftover Turkey Salad with Creamy Pickle Dressing

Make this easy turkey salad with a creamy sweet and tangy Bubbies Bread and Butter pickle dressing for a healthy and satisfying lunch or dinner.

Ingredients

Dressing:

Salad:

  • 8 cups mixed greens
  • 12 oz leftover turkey
  • 2 Tbsp thinly sliced red onion
  • 1 cup chopped celery
  • ½ cup shredded extra sharp cheddar cheese
  • 1 cup Bubbies Bread and Butter Chips
  • ¼ cup dried cranberries
  • optional toppings: sunflower seeds, remaining avocado, chopped nuts, etc.

Directions

  1. Make salad dressing by adding avocado, pickle juice, garlic powder, and salt to a blender. Blend until smooth. Set aside.
  2. Assemble salads by dividing the following ingredients into 4 bowls: mixed greens, leftover turkey, sliced red onion, extra sharp cheddar cheese, chopped celery, bread and butter pickles, dried cranberries.
  3. Dress each salad just before eating.
  4. Serve with leftover rolls or your favorite bread for a more filling meal
