Keto Crackers with Spicy Ranch Cashew Cheese

These crunchy keto crackers with spicy ranch cashew cheese are a vegan favorite. It's the perfect snack that you can't resist.

Ingredients

Spicy Ranch Cashew Cheese:

  • 1 cup of cashews (raw, spiced or roasted) soaked in boiling water for at least 1 hour but can be done and left overnight
  • 3 tbsp nutritional yeast
  • Juice and zest of 1 lemon
  • ¼ tsp apple cider vinegar
  • Any spice blend you like (garlic, onion powder, dried dill, paprika, cayenne pepper)
  • ¼ cup Bubbies Dill Pickle Relish
  • ¼ cup of water (only use if cheese is too dry and add a little at a time)
  • Salt and pepper to taste

Keto Crackers:

  • 1 cup of finely ground almond flour
  • 1 cup of shredded cheese
  • ¼ tsp sea salt
  • 1 – 3 tbsp of water, only use if the dough isn’t coming together
  • Preheat oven to 350 degrees F.
  • Place all ingredients in a food processor and pulse until everything comes together to form a sticky dough. If the dough isn’t coming together add one tbsp of water while pulsing until the mixture forms a dough ball.
  • Empty dough out onto the countertop on a piece of parchment paper and place the second piece of parchment on top of the mixture for easy rolling.
  • With a rolling pin, roll dough into a rectangle shape about ¼” thick.
  • Use a knife, pizza cutter or cookie cutter to cut up crackers and place crackers on a sheet pan lined with parchment.
  • Bake for 9 – 12 minutes in the oven until golden brown around edges. Crackers will get harder as they cool.

Directions

  1. Place cashews in a bowl and cover with boiling water. Let soak for at least one hour to overnight. Drain the cashews.
  2. Place all ingredients in a food processor and pulse until completely everything is blended into a fine mixture. Scape down the sides and pulse again to make sure you get all the bits!
  3. If the mixture is too thick, keep the food processor running and drizzle in a little water until the mixture looks similar to hummus.
  4. Now you are ready to dig in! Place in a bowl and top with more relish and any other flavors you’d like!
