Yaki Udon Noodles

This Yaki Udon Noodle dish is a quick and easy meal that's better than takeout.

Ingredients

  • 2 packs Udon noodles
  • Oyster mushrooms
  • Shiitake mushrooms
  • 1 stalk of bok choy
  • 3 small-medium carrots
  • 3 stems of asparagus
  • ½ cup onions
  • 3 cloves of garlic
  • 3 stalks of green onions
  • ½ small ginger slices
  • 3 - 4 Thai chili peppers (optional)
  • Sesame seeds

For sauce:

Directions

  1. Prepare noodles per package directions. Save some of the noodle cooking water and set aside.
  2. Meanwhile, cut carrots, asparagus, and ginger lengthwise. Also roughly chop peppers. Set aside.
  3. Chop bok choy and mushrooms. Set aside.
  4. Dice onion and garlic. Set aside.
  5. Combine sauce ingredients in a small mixing bowl until well combined.
  6. In a wok, heat pan to medium heat. Drizzle sesame oil in pan and heat until oil sizzles.
  7. When oil is hot, throw diced onions and garlic and cook until translucent.
  8. Add mushrooms and sauté until softened. Add all veggies except bok choy and green onions.
  9. When all veggies are softened, add in noodles (if noodles have hardened, pour some of the noodle cooking water to soften).
  10. Add sauce to wok mix until noodles are completely covered.
  11. Add bok choy to noodles, mix well.
  12. Remove from heat and let cool.
  13. Place noodles in serving dish, top with green onions and sesame seeds.
