Traditional German Meatballs with Mashed Potatoes and Sauerkraut

Meatballs and sauerkraut are the perfect combination of flavors. This traditional German meal made with a Bubbies favorite is a great weeknight meal everyone can enjoy.

Ingredients

  • 4 large potatoes, cubed
  • 1 tablespoon oil
  • 1 pound ground beef
  • 1 egg
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 oz butter
  • ½ tsp caraway seed
  • 1 tbl stone-ground German mustard, plus 1 tsp
  • ½ cup breadcrumbs
  • ½ tsp smoked paprika
  • 1 cup beef stock
  • ½ cup Bubbies Sauerkraut

Directions

  1. Place cubed potatoes in pot and cover with water. Place on stove and boil until potatoes are tender, about 7 minutes. Remove and set aside to cool.
  2. Gather and mash together the ground beef with the cracked egg in a medium bowl.
  3. When meat and egg is fully incorporated, add breadcrumbs, tbl German mustard, caraway seeds, paprika, salt and pepper.
  4. Form mixture into 1-inch balls.
  5. Heat oil in large skillet, add meatballs and brown both sides.
  6. When both sides are browned, add beef stock and tsp German mustard. Cook in medium-low heat for about 10 minutes.
  7. As meatballs cook, take boiled potatoes and mash until desired consistency is met. Add butter and mix well.
  8. Add potatoes, meatballs (drizzled a jus on meatballs) Bubbies Sauerkraut to plate and top meatballs with chopped parsley.
  9. Enjoy.
