Bubbies Pancetta Burger

Even when you love to cook, there are times when the age-old question of "What's for dinner?" can leave you stumped. Perhaps, like me, you've had the frustrating experience of making loops around the grocery store aisles, zombie-like, and still coming up empty-handed. For times like this, I've made the ultimate beef burger my go-to dinner solution. It's quick to prepare, flavorful, and guaranteed to make the family happy. And when served with Bubbie's special sauce, it rivals the $22 burgers on the fanciest restaurant menu.


  • ½ cup mayonnaise (preferably homemade aioli)
  • 2 tbsp Bubbies Kosher Dill Relish
  • 1 small garlic clove, minced
  • 2 tsp ketchup
  • 1 tbsp Bubbies Horseradish
  • Olive oil
  • 2 onions, halved and sliced 1/4 inch thick
  • 1 tsp balsamic vinegar
  • 4 thin slices pancetta
  • 1 ¼ lbs of ground beef chuck 80/20
  • 2 garlic cloves, crushed
  • Salt and freshly ground pepper
  • 4-6 leaves butter lettuce
  • 1 tomato, thinly sliced
  • 4 slices aged white cheddar
  • 4 soft hamburger buns, toasted


For Bubbies Special Sauce:

  1. In a small bowl combine mayo, relish, minced garlic, ketchup, and horseradish.
  2. Refrigerate until ready to serve.

For Burger Prep:

  1. In a heavy skillet over medium heat, heat 2 tbsp olive oil.
  2. Add onions and cook for about 5 minutes.
  3. Add a sprinkle of salt and pepper.
  4. Turn down heat and continue to cook until nicely caramelized, about 15 more minutes.
  5. About halfway through, add 1 teaspoon balsamic vinegar.
  6. Set aside to cool.
  7. Cook pancetta to desired crispness; reserve drippings and set aside.
  8. In a bowl mix beef with crushed garlic, salt, and pepper.
  9. Mix just a few times to incorporate. Don’t over mix.
  10. Enjoy!
