Thick-cut Chicken and Apple Paninis

Chicken & Apple Paninis with Bubbies Sauerkraut are the perfect nutritious lunch.

Ingredients

  • ½ tbl butter
  • 1 tbl mayonnaise
  • ½ cup Bubbies Sauerkraut, drained
  • 2 medium green apples, sliced thin
  • 2 cups thick-sliced roasted chicken (leftover chicken is a great choice)
  • 6 slices swiss cheese (or cheese of your choice)
  • 12 slices white bread (or bread of your choice)

Directions

  1. Turn on your griddle and bring it to a medium-high heat, add butter.
  2. Spread mayo on slices of bread.
  3. Place slices (butter down) on griddle.
  4. Add slices of apples (cover slice), sliced chicken, Bubbies Sauerkraut, and cheese. Add second slice of bread on top.
  5. Cook until one side is slightly brown and then flip it to cook the other side.
  6. Complete all paninis until all are cooked. Cool, cut in half and add toothpick to hold slices together.
  7. Add to lunch box or save for an after-school snack.
