Bratwurst Grilled Cheese with Bubbies Sauerkraut

Bratwurst Grilled Cheese with Bubbies Sauerkraut

These bratwurst grilled cheese sandwiches served on a soft pretzel bun with Bubbies Sauerkraut are savory and satisfying.

Ingredients

  • 4 large soft pretzels
  • 8 slices Muenster Cheese
  • 4 chicken or turkey bratwurst, cooked and sliced
  • 2 tbl unsalted butter, melted
  • 14 ounces (about half of the jar) Bubbies Sauerkraut, drained
  • ½ cup red onion, chopped
  • 1 ounce pimientos peppers, drained and chopped
  • ½ of a green pepper, chopped
  • ¼ cup carrot, shredded
  • ¾ cups sugar
  • 3 tbl apple cider vinegar
  • 1 English cucumbers, peeled and sliced thin
  • ¼ cup sour cream
  • 1 ½ tsp vinegar
  • ½ tsp sugar
  • ½ tsp dill, chopped and more for garnish
  • ¼ tsp salt

Directions

For the sauerkraut slaw:

  1. Stir the sugar and vinegar together in a large measuring cup until the sugar is dissolved.
  2. In a mixing bowl, combine the Bubbies Sauerkraut, red onion, pimientos, green peppers, carrot, sugar and apple cider vinegar.
  3. Cover and refrigerate for 4 hours or overnight.

For the cucumber salad:

  1. In a mixing bowl whisk together the sour cream, vinegar, sugar, salt and dill until combined.
  2. Add the sliced cucumbers and stir until the slices are evenly coated.
  3. Cover and refrigerate for 4 hours or overnight.

  1. Preheat oven to 425 degrees.
  2. Line 2 sheet pans with parchment paper and brush them lightly with the melted butter.
  3. Slice each pretzel in half horizontally and place them crust side down on the sheet pans.
  4. Place a slice of muenster on each half and and bake for 7-8 minutes on the upper racks until the cheese is bubbly and melted.
  5. Place one pretzel half on a plate and spoon some sauerkraut slaw over the melted cheese followed by slices of bratwurst, more sauerkraut and top with another half of the pretzel cheese side down. Slice in half and serve with the cucumber salad on the side.
