Vegan Mushroom Po Boys

Plant-based and completely vegan, these Mushroom Po'Boys dressed with Bubbies Prepared Horseradish sauce are a delicious weeknight meal everyone will enjoy.

Ingredients

For the oyster mushrooms and breading:

  • ½ pound oyster mushrooms (16 to 20)
  • 2 tablespoons ground flax
  • ⅓ cup water
  • 1 cup unsweetened plant-based milk
  • ¼ cup apple cider vinegar
  • 2 tablespoons vegan Worcestershire
  • 2 teaspoons garlic powder
  • 2 teaspoons dried basil
  • ½ cup Panko breadcrumbs
  • ½ cup cornmeal
  • 2 teaspoons Old Bay Seasoning
  • ¼ teaspoon cayenne pepper
  • Salt and Pepper to taste

For the Cajun horseradish sauce:

  • 1 cup vegan mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons Bubbies Horseradish
  • 1 tablespoon chili sauce
  • ¼ cayenne
  • ¼ teaspoon salt

For the sandwiches:

  • 1 baguette, cut in 4 equal pieces and sliced length wise
  • Bubbies Bread and Butter Pickles
  • 2 cups lettuce like bibb, Boston or romaine
  • Thinly sliced red onion
  • Lemon slices
  • Cajun horseradish sauce

Directions

  1. Preheat oven to 425 degrees. In a small bowl, stir ground flax and water together and let sit for 10 minutes to thicken.
  2. In a large bowl, add milk, vinegar, Worcestershire, garlic powder, basil, salt and pepper.
  3. Add flax mixture, stir, and pour mixture into a large Ziploc bag with mushrooms. Refrigerate for 20 minutes.
  4. While the mushrooms are marinating, prepare the sauce. Mix all the sauce ingredients together in a medium mixing bowl and store in fridge until ready to use.
  5. Next make the breading. Mix Panko breadcrumbs, cornmeal, Old Bay Seasoning, cayenne pepper, and a pinch of salt together in a large mixing bowl.
  6. Remove a few mushrooms from the marinade and coat them evenly in the breading mixture.
  7. Place the mushrooms on a parchment-lined sheet and bake until golden brown and crisp, about 15 minutes.
  8. To assemble the sandwiches, spread the Cajun horseradish sauce on the inside of the baguette pieces.
  9. Layer the lettuce, Bubbie’s Bread and Butter Pickles, and fried mushrooms on one half of each roll. Add more sauce and top with a few onion slices.
  10. Place the other piece of bread on top. Serve immediately with lemon slices on the side.
